The look: Recently refurbished, this classic cocktail bar is a real harbour stand-out. It’s minimalist, sleek, yet comfortable. The massive windows provide the perfect backdrop of Sydney at its best.
The soundtrack: Enjoy the live jazz bands on Friday and Saturday nights. Other nights there’s subtle background music.
Signature drink: Trial the enticing new cocktail list. The Hepburn ($18) is a tangy mix of Belvedere Pomaranzca, Campari, freshly pressed red grapefruit, shaken with fresh lemon juice and passion fruit syrup.
The bar snacks: This Mediterranean inspired tapas menu created by Italian head chef Alessandro Pavoni is A-grade. The grilled chorizo sausage ($9) and the char grilled artichoke ($11) are decadently delicious.
Best for: Taking anyone you genuinely want to have a real conversation with, in a spacious waterfront bar.
Wow factor: You can’t beat this truly spectacular view of the Harbour and the Opera House.
If this bar were an animal it would be: A green sea turtle – an interesting modern classic.
